Summer is here and the barbeque’s are in full swing! Fish is amazing on the grill. When you put it together with all the summer vegetables that are available it becomes a healthy change from the usual hot dog or hamburger. Farmer’s markets are bursting with this season’s vegetables. You can use just about any vegetable with this recipe, so if you have a favorite, chop according to the directions for the others just throw it in too!

Here’s what you will need:

  • 4 fresh fish fillets (any mild-flavored white fish), about 5-6 or each
  • 1 summer squash, sliced lengthwise into 3” strips or julienned
  • 1 zucchini, sliced lengthwise into 3″ strips or julienned
  • 1 cup heirloom tomatoes, chopped or cherry tomatoes, halved
  • 2 small sweet onions, sliced thin (Vidalia onions are a summer favorite)
  • 1 red, orange or yellow bell pepper, sliced lengthwise into 3″ strips
  • 2 ears sweet corn – slice kernels off the ear
  • 1/2 cup basil or cilantro, coarsely chopped
  • 2 tbsp. extra virgin olive oil
  • 1/2 lemon, juiced
  • ¼ cup white wine
  • Salt and pepper

Directions:

Preheat grill to 400 degrees.

Using a sharp Chef’s knife, chop all vegetables and herbs as directed and place in a large bowl. Combine olive oil, lemon juice and wine and pour over the vegetables, add a pinch of salt and toss well.

If fish is freshly caught, debone the fish with a sharp Boning knife and filet. Use the Boning knife to cut shallow slits in the flesh of the fish. This allows to flavors to cook through the filet.

Pull a square of tin foil about 12 x 24″ out. Fold it in half and place one fish fillet in the center. Spoon some vegetables (about 1/3 cup) on the fish, add a dash of salt and pepper. Wrap up the foil around the fish and fold in all sides tightly. You want to make sure the sides are tight so no steam will escape. The result should be a little package!

Repeat with the remaining fish and then place the foil packets directly on the grill for 15-20 minutes, until fish is thoroughly cooked and flakes easily. Check one packet by carefully unwrapping a small portion of the top and use a fork to see if the fish flakes easily. Depending on the thickness of the fish, it may require additional cooking.

When the fish is done, place the packets on individual plates and let it rest for a few minutes before unwrapping. It will be VERY HOT when you open them so be careful and enjoy!!
