  • The 6 inch boning knife is used to work close to the bone or in areas where a longer knife is a problem.
  • A flexible blade on a boning knife is best used on fish and poultry, while a more stiff blade would be better served for beef and pork
  • The curved blade is useful when holding the knife with the blade inverted or protruding from the heel side of the hand instead of the thumb side.
  • Holding the knife in this manor gives the knife handler a great deal of control over the blade.
  • The flex or flexible blade is used to cut right against the bone. Pressing the flexible edge against the bone letting it bend slightly to take advantage of the best possible cutting angle.
